Nana’s Stuffed Peppers

Ingredients:

  • 4 medium (Green) Peppers
  • 1 pound Ground Chicken
  • 4 tablespoons shredded Old White Cheddar Cheese, divided by 4
  • 1/2 cup shredded Old White Cheddar Cheese
  • 1/2 Teaspoon Black Pepper, divided by 4
  • 2 cloves Garlic, minced
  • 1 Red Onion, 8 rings divided by 4; rest chopped
  • 1 Green Onion, chopped
  • 1 Tomato, chopped
  • 8 Mushrooms, sliced
  • 2 tablespoons Worcestershire Sauce
  • 2 Eggs, beaten
  • 2 cups Rice, 1 cup Water (optional) *

Directions:

In a pan, cook Ground Chicken on Medium Heat for 25-30 minutes; add Eggs, Garlic, and Worcestershire Sauce. Stir in Red and Green Onions, Tomato, Mushrooms, and Old White Cheddar Cheese.

Let mixture stand on Low Heat for 15 minutes, then cool for 10 minutes.

Remove Pepper tops, set aside; hollow out Peppers.

Pack mixture between 4 Peppers; top each with 2 Red Onion rings and Old White Cheddar Cheese, Black Pepper, and Pepper Tops.

Back at 350° for 10-15 minutes.

* If having Rice, add to mixture before Old White Cheddar Cheese.
